• There is nothing better on a hot day than a barbecue. This can also be accomplished just as easily in a conventional oven.

This is a simple dish to prepare and ideal if you wander to spend a few minutes doing prep work then to leave with a little bit of supervision.

    Ingredients:

    2 chicken legs.

    1 clove of garlic (crushed).

    1 tablespoon of lemon juice.

    1 teaspoons of mixed herbs.

Start by placing all of the ingredients in a sealable plastic bag, work in the marinade and allow to marinade for at least 1 hour.

Bake in the oven at a temperature of 180 degrees Celsius, 350 degrees Fahrenheit for 45 minutes.

I served this meal with some baked miniature Jersey potatoes in butter and herbs, baked beans, sweetcorn, steak and salad.

    Enjoy!

  • What is better on a cold day than slow cooked or crockpot lamb shanks?

Slow cooking for 6 hours gives the meat a soft texture but stops the meat from completely falling off the bone.

It is always better to wake up early on a Sunday morning if you plan to eat before the evening because the time is 6 hours on the high temperature setting.

Prep time 45 minutes to an hour.

    Ingredients:

    2 small lamb shanks.

    1 medium onion, chopped.

    1 leek, chopped.

    1 medium carrot, chopped.

    1 large parsnip, chopped.

5 small or 1 large potatoes, chopped.

    500 ml of lamb stock.

    250 ml red wine.

    1 tablespoon of Worcestershire sauce.

    1 stock cube.

1 teaspoon of dried rosemary, ground.

    Olive oil.

    Salt and pepper to taste.

Start by turning on the slow cooker to high. Then fry the onion in a large frying pan. When the onion starts to brown add the chopped leek, carrot, parsnip and potatoes.

Heat up the vegetables before adding to the slow cooker or crockpot.

Next you want to turn up the heat a little and sear the lamb. Ensuring the meat browns a bit.

Add the meat to the vegetables in the slow cooker.

In the frying pan now add stock, wine and Worcester Sauce and heat up until nearly boiling.

Add this to the slow cooker with the stock cube and ground rosemary.

Place the lid on the slow cooker and cook on high for 6 hours stirring very occasionally.

I normally serve this dish with roasted potatoes and a Yorkshire Pudding.

I serve this with roasted carrot and parsnip in honey and rosemary:

    And:

Serve with gravy and mint sauce.

    Enjoy.

  • This is a really tasty addition to any roast dinner, stew or oven baked meat dish.

It is a sweet dish and a great way to get children to eat their vegetables.

This takes about 15 minutes to prepare and 30 minutes to cook.

You can refrigerate or freeze and can be reheated in your oven.

    Ingredients:

    1 Swede

Roughly the same amount of sweet potato.

    1 large parsnip.

    25 grams of salted butter.

    Salt and pepper to taste.

Peel and roughly chop all the vegetables.

Add to a saucepan and boil for about 30 minutes.

When the vegetables are soft, drain and mash in the saucepan with the butter, salt and pepper.

    Enjoy!

  • This is one of my favourite dishes to add to a roast dinner or stew. The carrots and parsnips are cooked in honey and rosemary. It is very simple and takes 5 minutes to prepare and 30 minutes to cook.

    Setves 2.

    1 large carrot.
    1 large parsnip cored
1/2 teaspoon of rosemary crushed in a mortar and pestle.
    50g of honey.

Crush the rosemary into a powder and sprinkle over the vegetables.

Cover in honey and roast on 180 degrees Celsius for 30 minutes.

  • The creamy texture of carbonara really makes the dish so tasty. It is a quick and simple dish to prepare and takes the time to cook pasta to prepare, only 10 to 15 minutes. Homemade carbonara is so simple and delicious that you will never want to buy it prepackaged again.

    Serves two.

    Ingredients:

    2 egg yolks.

    150 grams of linguine.

80 to 100 grams of unsmoked pancetta.

    50 grams of Parmesan cheese.

    Italian herbs.

Either 50 grams of butter or 1 tablespoons of extra virgin olive oil.

    Salt and pepper to taste.

    Optional:

150 grams of diced chicken breast.
    1 clove of garlic.

The butter would work better than oil.

Start by boiling the pasta in heavily salted water. For the best result make sure the water is at a rolling boil before adding the pasta.

In a frying pan add the olive oil and pancetta and herbs and cook on the lowest heat possible. Alternatively you could also cook the chicken in the garlic and butter with or without the pancetta. Stir occasionally.

Next separate the eggs, add the yolks to a bowl and mix together. Then grate in the Parmesan.

When the meat and pasta are cooked drain olive oil from the pan add one tablespoon of pasta water. Rinse the pasta in boiling water and add it to the frying pan with the cooked meat.

Remove frying pan from the heat and wait 1 minute before adding the eggs and cheese. This is very important because if the pan is too hot the eggs will scramble rather than melt into a creamy sauce.

Finally serve with a little grated Parmesan.

Can be served with some garlic bread and Prosecco.

    Enjoy.

Add the chicken the diced chicken and pancetta and fry on a low heat for 10 to 15 minutes until the chicken is cooked throughout.
While the chicken and pancetta is cooking plate up your salad, croutons and grated cheese to taste.
